Recipe Ingredients for Sausage Salsa Risotto

225 grams Rice, Brown, Long-grain
1 large(150 g) Onions
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 tbsp Olive Oil
300 grams Sauce, Ready-to-serve, Salsa
260 grams Pork Sausage, Fresh, Cooked
2 Cube Chicken Stock Cubes
1 cup Parsley

Recipe Directions for Sausage Salsa Risotto

  1. Start the low fat sausages under the grill.

  2. Chop the onion and red pepper and saute in the olive oil.

  3. When the vegetables are soft add the rice. Add 450ml of boiling water to the two stock cubes and pour over rice. Stir in small jar of salsa.

  4. Cover and cook the rice. When the sausages are browned, slice and add to rice. The rice should absorb all the water, just add more if it dries out before it is cooked through.

  5. Stir through the chopped parsley (optional) and serve.
