Recipe Ingredients for Sausage and Potatoes

1 lb smoked sausage
4 medium Yukon Gold Potatoes
1/2 cup diced onion
2 cloves garlic
1/4 cup olive oil
1 salt and pepper to taste

Recipe Directions for Sausage and Potatoes

  1. Peel and dice the potatoes.

  2. Slice the sausage into rounds then slice in half again.

  3. Mince the garlic.

  4. Heat a nonstick skillet to medium-high. Add some of the oil. Once the oil heats up, add the potatoes and cover.

  5. Stir occasionally and add more oil if needed. Halfway through the cooking, add onions and garlic. Cover and stir occassionally until the potatoes are fork tender.

  6. Add any remaining oil and the sausage to the skillet. Stir, cover and drop the temperature to medium low.

  7. Cook for about five to ten minutes more. Serve.
