Sauteed turkey sausage, potatoes and veggies

Recipe Ingredients for Sausage and Potato Skillet

16 oz Turkey Sausage (Louis Rich)
2 tbs olive oil
1 lb red potatoes, quartered then sliced
1/2 lb sweet potatoes, quartered then sliced
1 medium bell pepper, diced
1 medium onion, diced
2 stalks celery, diced
1/2 cup chicken broth
1 tbs chili powder
2 tsp cumin
1 tsp salt
1/2 tsp pepper

Recipe Directions for Sausage and Potato Skillet

  1. Preheat 1 tbs oil in heavy skillet over medium high heat

  2. Slice sausage into 1/2 inch slices, add to pan-saute until browned-remove from pan

  3. Add remaining oil to pan

  4. Add potatoes, (may have to do this in 2 or 3 batches) saute until browned-remove from pan

  5. Saute pepper, onion and celery until barely soft

  6. Deglaze pan with chicken broth

  7. Add potatoes and sausage back to pan-lower heat to medium

  8. Add chili powder, cumin, salt and pepper

  9. Cook until potatoes are done

  10. Serve immediately
