Small fritada with turkey sausage.

Recipe Ingredients for Sausage Potato Fritada

1/2 T butter
1 small potato, diced
6 oz (Smoked turkey sausage)
3 eggs
1/4 c milk
2 oz cheddar cheese, shredded

Recipe Directions for Sausage Potato Fritada

  1. Saute potato with butter and season to taste with salt, pepper, and herbs until potato is about half way cooked.

  2. Add sausage and continue cooking until potatoes are tender.

  3. Beat eggs together with milk in small bowl.

  4. In greased 8 inch skillet add potato and sausage mix and pour in egg mixture.

  5. Cook over medium heat without stiring until mostly set.

  6. Heat broiler of oven.

  7. Sprinkle cheese on top of fritada.

  8. Place under broiler until cheese has started to brown. Eggs should be completely cooked at this point.

  9. Run knife around edge of pan and carfully flip or slide onto plate. Cut into 4 wedges and serve.
