Not that great for the waistline but it was a perfectly easy dinner and hearty meal for a cold winter night.

Recipe Ingredients for Sausage & Potato Bake

1 lb pork sausage
1 lb potatoes, yukon gold
1/2 onion, chopped into eighths
16 oz cremini mushrooms, quartered
1/4 cup olive oil
1 tbsp balsamic vinegar
1 tbsp thyme
1 tbsp rosemary
6 cloves garlic, peeled

Recipe Directions for Sausage & Potato Bake

  1. Preheat oven to 425 degrees.

  2. Cut the sausage into 1 inch chunks and cut the yukon golds into bite-sized pieces. Throw all ingredients into a baking pan and stir to mix it all up.

  3. Cover with foil and bake for 30 minutes. At 30 minutes, remove foil, give it a stir and cook uncovered another 30 - 40 minutes until everything is the desired level of crispiness.
