Italian sausage, with colorful peppers, over whole wheat penne.

Recipe Ingredients for Sausage with Peppers & Penne

15 oz Sausage, Italian, Sweet, Links
1/2 cup onion, julienned
2 cloves garlic, minced
1 green pepper, julienned
1 red pepper, julienned
1 yellow pepper, julienned
8 oz. Mushrooms, Brown, Italian, Or Crimini, sliced
2 tsp olive oil
1 pinch salt
1/4 cup dry red wine
1/2 cup water
3 cups fire roasted crushed tomatoes
16 oz. Organic Whole Wheat Penne
1/2 cup Sargento Reduced Fat Mozzarella Shredded Cheese

Recipe Directions for Sausage with Peppers & Penne

  1. Add olive oil to pan and sauté onion and garlic. When onions are translucent, add mushrooms, sprinkle with salt. Stir well over medium high flame.

  2. When mushrooms are soft and water has evaporated, add peppers. Cook until peppers soften. Remove vegetables and set aside.

  3. Cut sausage into half-inch chunks and brown place in skillet. Turn to brown both sides. When meat is browned (pan will be very dry and starting to carmelize), deglaze with red wine. Stir well, scraping bottom of skillet.

  4. Return vegetables to pan, add crushed tomatoes (rinse can with water and add).

  5. Reduce heat and simmer for 15 minutes covered.

  6. Cook pasta according to package. If skillet is large and can accomodate pasta in sauce, finish pasta in the sauce. Or drain pasta, return to pot, add sauce and toss well.

  7. Finish with shredded cheese.
