Chicken sausage in a tomato sauce with onions, garlic and peppers served over fried polenta. Topped off with a dollop of ricotta cheese.

Recipe Ingredients for Sausage, peppers and onions over polenta

2 links chicken sausage
1 large onion, chopped
2 bell peppers, chopped
1 tbsp garlic, minced
1 tbsp olive oil
1 1/2 cups pasta sauce
2 tbsp olive oil
500 g polenta, cut into 1/2 in. slices
1/2 tsp pepper
1 tbsp parmesan cheese
1/2 cup ricotta cheese

Recipe Directions for Sausage, peppers and onions over polenta

  1. Cook sausage links over medium heat in large pan with small amount of olive oil.

  2. Remove from heat and cut up into small pieces.

  3. Saute onions in pan with more live oil.

  4. Add peppers and garlic and cook until tender.

  5. Add cooked cut up sausage and pasta sauce.

  6. Stir together and let simmer.

  7. Fry polenta (a few minutes on each side) in a small pan with olive oil and pepper.

  8. Dust with parmesan cheese.

  9. Spoon sauce over polenta and top with ricotta cheese.
