Recipe Ingredients for Sausage, mushroom and spinach lasagna

3250 grams baguette, sliced lengthwise
100 garlic cloves, roasted
1 cup extra virgin olive oil
1 tbs sea salt
75 garlic cloves
15 3/4 cup low-fat mayonnaise
11 anchovy fillets
3 1/2 cups parmesan cheese
1/2 cup worcestershire sauce
1/2 cup dijon mustard
1 1/2 cup lemon juice
30 cups croutons
25 head romaine lettuce
8 cups parmesan cheese
10 lbs. whole wheat lasagna noodles
15 lbs turkey sausage
60 cups mushrooms
3 3/4 cups water
15 lbs spinach
420 oz crushed tomatoes
3 3/4 cups basil
2 tsp sea salt
2 tsp pepper
15 lbs part-skim ricotta cheese
7 1/2 lbs part-skim mozzarella cheese, shredded

Recipe Directions for Sausage, mushroom and spinach lasagna

  1. Bread: mash garlic, oil, and salt into paste; spread mixture on bread; bake 4-6 minutes or until brown and crispy

  2. Salad: combine garlic, mayo, anchovy, parmesan, worcestershire, dijon, lemon juice in food processor and pulse until smooth

  3. Wash and dry lettuce and toss with croutons and dressing.

  4. Lasagna: preheat oven to 350 degrees

  5. boil noodles until not quite tender; drain and cover with cool water

  6. cook sausage until brown;add mushrooms and water cook until water is absorbed and mushrooms are tender; stir in spinach and remove from heat.

  7. Mix tomatoes with basil salt and pepper

  8. to assemble spread some tomato mixture in bottom of prepared pan. tope with layer of noodles followed by ricotta, sausage mixture, tomatoes and mozzarella. repeat

  9. cover with foil and bake 1 hour or until bubbling and heated through.
