Sausage Muffins Recipe

This is a recipe I came up with when I was on a Low Carb diet. It is one that I actually loved and have continued to make. Its very easy to prepare a dozen or 6 ahead of time and keep in the refrigerator for Breakfast.

Recipe Ingredients for Sausage Muffins

6 Turkey Sausage links
22 egg whites
2 Eggs
1 tomato
1 onion
12 mushrooms
2 tbs olive oil
1/4 cup milk

Recipe Directions for Sausage Muffins

  1. Dice Onion, Mushrooms, and Tomato

  2. Remove the sausage from the links, or buy non linked turkey sausage. Saute in a pan until lightly browned.

  3. Use the same pan to saute the onions and mushrooms, you can use 1 tbs of the olive oil here if there is not enough grease from the sausage.

  4. Mix the egg whites, eggs, milk, sauteed onions, mushrooms and diced tomato and whisk lightly until it is frothy.

  5. Lightly grease a cupcake pan with the remaining olive oil and line the bottoms of the cup with the Turkey Sausage. Pour in a small amount of the egg mixture and stir the sausage with the egg. (this will help the sausage stick together as the "crust" of the cupcake). Pour the remaining egg into the each cupcakes and bake at 350F for 10 - 15 minutes or until the egg has expanded and looks fluffy like a muffin.

  6. You can garnish with a small amount of cheese as well without adding too much calorie.
