Recipe Ingredients for Sausage Lentil Soup 2

1 lb lentils
1/4 cup olive oil
4 cups onion
4 cups leeks
1 tbsp garlic
1 tbsp salt
1 1/2 tsp pepper
1 tbsp fresh thyme
1 tsp ground cumin
3 cups celery
3 cups carrot
3 quarts chicken stock
1/4 cup tomato paste
1 lb kielbasa
2 tbsp red wine vinegar

Recipe Directions for Sausage Lentil Soup 2

In large pot, over medium heat, heat oil and saute the onions, leeks, garlic, salt, pepper, thyme and cumin until vegetables are translucent and tender (about 20 minutes). Add celery and carrots and saute for another 10 minutes. Add chicken stock, tomato paste and lentils; cover and bring to boil. Reduce heat and simmer uncovered for 1 hour, or until lentils are cooked through and tender. Add the kielbasa and red wine vinegar and simmer until sausage is hot. Serve drizzled with olive oil and sprinkled with parmesan cheese.
