I make this soup often, but the starchy veggie ingredients change between potatoes and leeks, cannelloni or white kidney beans, and lentils. Lentils provide the heartiest soup with a whopping 8 grams of fiber and 8 grams of protein per serving on lentil!

Recipe Ingredients for Sausage and Kale Soup

1 1/2 pounds Pork Sausage, Fresh, Cooked
1 pound ground beef
8 oz lentils
2 cups turkey broth
2 cups kale
1 onion
1 garlic clove
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes

Recipe Directions for Sausage and Kale Soup

  1. Dice the onion, cook until translucent then add garlic.

  2. Add the ground meats and cook all the way through. Add oregano, salt, and pepper to taste; you can also add chili flakes.

  3. Add the lentils (which have been soaking in a bowl of water over night) and the chicken stock (turkey stock is also delicious).

  4. Once at a boil - add your kale (make sure to cut out the stem and chop into bite sized pieces). Once kale is cooked, soup is on!
