Hearty winter soup with 2 kinds of potatoes, kale, and 2 kinds of beans.

Recipe Ingredients for Sausage, kale, and potato soup

3/4 lb turkey sausage
2 cups chopped onion
2 cloves chopped garlic
1/2 tsp salt
1/4 tsp red pepper flakes
2 cups sweet potato, cubed and peeled
2 cups red potato, cubed and unpeeled
2 cups chicken broth
2 cups water
4 cups kale, raw
16 oz cannellini beans
16 oz red kidney beans

Recipe Directions for Sausage, kale, and potato soup

  1. Coat a deep pot with cooking spray. Remove casings from sausage, brown in pot, breaking up meat as it cooks. When meat is still somewhat pink, add onion, garlic, salt, and red pepper. Saute 3 minutes.

  2. Add potatoes, broth, and water, simmer 8 minutes.

  3. Add kale in batches, allowing it to cook down in between.

  4. Add drained, rinsed beans, simmer 10 minutes more. Adjust seasonings to taste.
