Recipe Ingredients for Sausage and Fish Gumbo

4 tbsp lard, divided
1 c onion, chopped
1/4 c celery, chopped
2 cloves garlic, minced
2 tsp cajun seasoning
3 tbsp flour
3 c water or stock
12 oz sausage, cooked
6 oz fish, cooked
2 c okra, chopped

Recipe Directions for Sausage and Fish Gumbo

Heat 1 Tbsp lard in a heavy saucepan. Saute onion, celery and garlic over medium heat until onion and celery are translucent. Add Cajun seasoning and cook another minute. Scrape into slow cooker or large pot. Add remaining lard to saucepan and heat over medium-high. Gradually sprinkle flour over lard, stirring constantly, to make a smooth paste. Turn heat to medium-low and cook another 10-15 minutes, stirring constantly, until roux turns a deep reddish-brown. Carefully pour in a small amount of cold water or stock, stirring as you pour. Stir until the mixture is smooth. Repeat several times, until the mixture reaches a gravy-like consistency. Pour over vegetables in pot. Add sausage, fish and okra. Cook on the stove an hour or two, stirring occasionally, or in the slow cooker 6-8 hours. Serve over hot rice, with cornbread.
