Sausage Egg Mushroom Scramble with Baked Hashbrowns

Recipe Ingredients for Sausage Egg Mushroom Scramble with Baked Hashbrowns

2 eggs
1/3 cup milk
21 grams laughing cow cheese
70 3/5 grams sausage
1 1/2 cups mushrooms
1 tbsp olive oil
2 potato
1 onion
1 tbsp canola oil

Recipe Directions for Sausage Egg Mushroom Scramble with Baked Hashbrowns

  1. Preheat oven to 400.

  2. Peel & shred potatoes. Chop onion. Mix with canola oil. Place in baking pan. Bake for 30 minutes.

  3. Quarter mushrooms. Heat olive oil in pan. Add mushrooms and cook on medium heat for 10 minutes.

  4. Cut one large sausage link into 1/4 inch thick quarters. Add to mushrooms and cook on medium low for 10 minutes. Set aside, but leave any remaining moisture in pan.

  5. Mix eggs, milk, and 1 wedge laughing cow cheese. Scramble in pan on medium heat for 5 minutes or until cooked. Add mushrooms and sausage to pan and set on low to keep warm until hashbrowns are done.
