Recipe Ingredients for Sausage and chicken polenta bake

16 oz. Turkey sausage
4 oz. chicken breast, cubed
1 medium carrot, chopped
1/2 medium green pepper, chopped
1/2 medium red pepper, chopped
1 medium onion, chopped
2 cups chicken broth
2 cups cornmeal
24 oz. tomatoes, crushed
8 oz. reduced fat cheese

Recipe Directions for Sausage and chicken polenta bake

  1. Cook sausage and chicken

  2. Add tomatoes and veggies

  3. Add salt, pepper, and spices to taste. Simmer.

  4. Whisk cornmeal with 4 cups cold water. Bring to a simmer.

  5. Meanwhile, boil chicken broth, and add gradually to cornmeal, stirring constantly. Cook 5 minutes while stirring.

  6. Layer in 9x13 baking dish: 1/2 polenta, 1/2 meat sauce, 1/2 cheese, remaining polenta, remaining sauce.

  7. Bake at 350 for 15 minutes. Top with cheese. Bake for additional 15 minutes.

  8. Let sit 15 minutes before serving.
