These egg 'muffins' make a hearty breakfast that can be eaten on the run. Make them ahead and warm them in the microwave for a fast and slimming breakfast treat.

Recipe Ingredients for Sausage and Cheese Breakfast Cups

4 oz. turkey sausage (or crumbled turkey bacon)
1/2 green pepper, chopped
1/4 onion, chopped
5 large eggs (or Egg Beaters)
12 oz. sliced mushrooms (canned/drained)
2 oz. reduced fat Cheddar Cheese (shredded)

Recipe Directions for Sausage and Cheese Breakfast Cups

  1. Preheat oven to 350 degrees.

  2. Coat a 6-cup nonstick muffin pan with cooking spray or line with paper baking cups.

  3. In a medium nonstick skillet over medium-high heat, cook the sausage, pepper and onion for 5 minutes, or until the sausage is no longer pink

  4. Spoon the mixture into a bowl and cool slightly.

  5. Stir in the eggs and mushrooms.

  6. Evenly divide the mixture among the prepared muffin cups.

  7. Sprinkle with the cheese.

  8. Bake for 20 minutes, or until the egg is set.

  9. Cool for 5-10 minutes before removing from pan.
