Hearty Sicilian Sausage Casserole

Recipe Ingredients for Sausage Casserole

12 link (raw dimensions: 4" long x 7/8" dia), cooked Pork Sausage, Fresh, Cooked
297 grams Lentils, Mature Seeds
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
3 clove Garlic
3 cup San Marzano Passata Tomatoes
1.5 cup Spinach
0.5 cup, pieces or slices Mushrooms
2 tbsp Salt, Table
1 tsp Pepper, Black
2 1tsp Olive Oil
10 olives Greek Kalamata Olive Bar

Recipe Directions for Sausage Casserole

  1. Chop garlic, Zuchini (squash) and mushrooms

  2. Heat a large cast iron casserole dish or electric frying pan (deep)

  3. Cook Sausages until very browned

  4. Take off sausages and slice diagonally to form large rounds

  5. Add mushrooms, Zuchini (squash) and garlic to heated pan and swirl to catch all the cooked juices

  6. Add salt, pepper and dried herbs

  7. Return sausage rounds to pan

  8. Cook for 5 minutes and then add Passata, Olives, Tinned tomato, tinned lentils

  9. Simmer for another 10-15 (or more, depending on how much you're willing to wait)
