Stretch 2 sausages over 6 servings. It's a cheap way to add a little variety and season brown rice.

Recipe Ingredients for Sausage Burritos

2 tbsp olive oil
1 medium onion, chopped
1 red bell pepper, chopped
1 sweet Italian sausage link,
1 hot Italian sausage link
8 oz black beans
2 cups brown rice
1/2 tsp Tabasco sauce
6 tsp sour cream
6 tbsp cheddar cheese
6 flour tortillas

Recipe Directions for Sausage Burritos

  1. Prepare rice according to the package

  2. Saute onions and peppers in oil and move to the side of the pan. Crumble sausage and cook thoroughly.

  3. Rinse beans and add to the pan. Add Tabasco to the rice and add rice to the pan. Mix together and cook until all the flavors have blended.

  4. Spoon mixture on tortillas. Top with sour cream and cheese.
