Recipe Ingredients for Sausage Bean and escarole Soup

2 tablespoons olive oil
2 garlic cloves, chopped
1 pound escarole
1 medium onion, chopped
1 stalk,+large+11"-12"+long celery rib
2 carrots, cut diagonally into 1/8-inch-thick slices
4 cups Fat Free Chicken Broth
2 cups water
15 ounce cannellini beans, drained and rinsed
4 link Chef Bruce Aidells
1 Freshly ground black pepper
1 tbs fresh lemon juice

Recipe Directions for Sausage Bean and escarole Soup

  1. Heat oil in a 5- to 6-quart heavy pot over moderately high heat until hot but not smoking, then sauté sausages until golden brown. Remove with slotted spoon. You should have about 1 TBS oil left in pot, Add to the same pot, onion, garlic, celery, and carrots, stirring occasionally, until golden, about 8 minutes. Re-add the browned sausage.

  2. Add chicken broth and water,bring to a boil, then add escarole and beans and simmer, uncovered, until carrots and celery are tender, about 10 minutes. Season with salt and pepper. Add lemon juice. Add Optional 1/4 cup parmigianno and stir again.

  3. Ladle the soup into 6 bowls.
