Recipe Ingredients for sausage and bean casserole (veggie style)

16 oz cooked pinto beans, mature seeds, cooked without salt
200 grams (Quorn) cumberland sausages - burgers and sausages , 4 sausages
400 grams canned tomatoes, chopped with their juice
6 oz carrots, sliced
2 stalks of celery, sliced
1 medium onion, chopped finely
2 garlic cloves, finely chopped
1 tablespoon olive oil
1 tablespoon tomato puree
1/2 pint boiling water
5 grams bouillon - swiss vegetable, powder
1 teaspoon dried mixed herbs
1 gram bay leaf

Recipe Directions for sausage and bean casserole (veggie style)

  1. Brown sausages for 2 minutes on each side and set aside.

  2. Heat oil in a large pan, add the onions and fry until soft, add the garlic, celery and carrots and saute the vegetables on a low heat with lid on for 8 - 10 minutes.

  3. Make up the stock and add with the tomatoes, tomato puree, bring up to temperature and add the sausages, beans, bay leaf, mixed herbs and season well to taste.

  4. Now simmer and cook with lid on for 20 - 30 minutes or until sausages are cooked and vegetables are soft.
