Chorizo Sausage and Bean Casserole

Recipe Ingredients for Sausage and Bean Casserole

1 (200g) onion, chopped
2 cloves of garlic, crushed
160 g chorizo sausage
500 g chopped tomatoe or passata
2 peppers, chopped
240 g blackeye peas, drained
240 g kidney beans, drained
1 stock cube, beef

Recipe Directions for Sausage and Bean Casserole

  1. Chop all ingredients as above

  2. Fry onion and garlic. Add the chorizo and cook for 5-10 minutes.

  3. Pour off the oil, add the tinned tomatoes, beans and stock.

  4. Season well and simmer with lid on for 90 minutes

  5. Serve with ciabatta bread.
