Sausage, Apple & Cornbread Stuffing

Recipe Ingredients for Sausage, Apple & Cornbread Stuffing

8 oz, 2 links Sausage, Turkey, Breakfast Links, Mild
1 oz Apple Juice
1 tsp Butter
1 medium (2-1/2" dia) Onions
2 stalk, medium (7-1/2" - 8" long) Celery
2 medium (3") Apples
0.25 cup Parsley
2 tablespoon Thyme
1 tbsp Poultry Seasoning
2 serving Classic Cornbread Stuffing Mix
1.5 cup Light
0.13 tsp Salt, Table
0.13 tsp Pepper, Black

Recipe Directions for Sausage, Apple & Cornbread Stuffing

  1. Coat a large non-stick skillet with cooking spray;place over medium heat.

  2. Remove sausage from casing;add sausage to skillet & cook, breaking up into small pieces until no pink remains. Add apple juice and simmer, stirring constantly, until liquid evaporates. Remove sausage to large bow; set aside.

  3. Melt butter in skillet. Add onion and celery; saute until translucent, about 8 minutes. Stir in apples (diced), parsley, thyme & poultry seasoning; cook about 3 minutes. Add stuffing to skillet; stir in enough chicken stock to moisten stuffing. Season to taste. Yields 3/4 cup per serving.
