Sauerkraut can be used as a side dish, eaten as a Reuben sandwich. Some vegetarian alternatives in place of corned beef are tempeh bacon.

Recipe Ingredients for Sauerkraut used for Reuben Sandwich

1 small onion, thinly sliced
1 tbsp garlic powder (or 1 clove)
1 pound sauerkraut, drained and rinsed
1 tbsp ground black pepper
1 tsp allspice

Recipe Directions for Sauerkraut used for Reuben Sandwich

  1. Open 1 canned pound of sauerkraut, rinse and drain. Dump in a large bowl.

  2. Chop 1 small onion and add.

  3. Combine 1 tbsp of garlic powder or minced garlic clove, with 1 tbsp of ground black pepper and 1 tsp of allspice (or just eyeball a generous amount of allspice).

  4. Mix well.
