Oscar Meyer ready to serve bacon is sliced very thin, is pre-cooked and is equivalent to apx. 1 slice regular bacon per 4 slice serving. Using regular bacon will significantly change calorie and fat content. A bone reserved from a ham is a nice addition while the soup simmers.

Recipe Ingredients for Sauerkraut soup

4 T fat-free Italian dressing
2 servings Oscar Meyer ready to serve bacon (8 slices, snipped)
1 small onion, chopped
1 green pepper, chopped
2 stalks celery, chopped
1 tsp minced garlic
1 tablespoon flour
1 teaspoon paprika
2 teaspoons caraway seed
4 cups vegetable broth
8 oz tomato sauce
14 ounces sauerkraut, drained and rinsed
8 oz lean ham, chopped
12 oz green beans, frozen
1 T parsley, dried
1 salt and pepper to taste

Recipe Directions for Sauerkraut soup

  1. Saute bacon, onion, green pepper, celery and garlic in dressing until softened.

  2. Add flour, paprika and caraway and cook into mixture for a few minutes.

  3. Add broth, tomato sauce, sauerkraut, ham, green beans (thawed) and salt and pepper to taste (and ham bone, if using) and simmer until flavors have combined.
