Sauerkraut and Kielbasa Soup Recipe

Hearty and filling, delicious soup. Each serving is probably about 1.5-2 cups worth of soup (didn't measure). I used vegetarian Kielbasa with similar stats, but couldn't find on the data base. Can be done with any mix of vegetables. i couldn't find a number for ham stock, so i used beef stock twice. The recipe requires 1/4 gallon beef stock, and 1/4 gallon of ham stock. I used 1 (14.5oz) can of fire roasted tomatos with green chili's, and 1 (14.5oz) can of sauerkraut with liquids.

Recipe Ingredients for Sauerkraut and Kielbasa Soup

9 g minced garlic
92 g raw barley
160 g raw chopped onion
170 g raw chopped baby carrot
200 g raw chopped celery
480 g canned tomatos with green chili's
16 g beef broth cube
16 g ham stock powder
230 g lean turkey keilbasa
655 g sauerkraut with liquids
1 g dried thyme

Recipe Directions for Sauerkraut and Kielbasa Soup

  1. prepare barley according to directions.

  2. saute onions, carrots, celery in a large soup pan for 8-10 minutes.

  3. add garlic and saute for 3 more minutes.

  4. add ham stock, beef broth, and canned tomatos

  5. simmer for 1 hour.

  6. chop the kielbasa into small pieces

  7. add kielbasa, sauerkraut, and thyme

  8. simmer for 30 minutes

  9. remove from heat and add barley.

  10. serve
