Yummy whole wheat pasta with chicken and italian seasoning, and a nice, chunky tomato sauce! Top it off with a little fresh grated Parmesan Reggiano and WOW.

Recipe Ingredients for Saucy Chicken Rigatoni

1 tsp olive oil
1 medium onion, diced
1 clove garlic, minced
28 ounce tomatoes
1 1/4 cups chicken broth, fat-free
16 ounce dried whole wheat pasta
1 cup mushrooms, sliced
1 tsp italian seasoning
1 tsp red pepper flakes
6 ounce boneless skinless chicken breasts
1/3 cup parmesan cheese, grated
5 leaves basil

Recipe Directions for Saucy Chicken Rigatoni

  1. Heat the olive oil in a large, non-stick skillet over medium heat.

  2. Saute the onion and garlic until they are soft but not browned.

  3. Stir in the undrained tomatoes, pasta, chicken broth, mushrooms, italian seasoning, and red pepper.

  4. Brint to boil. Reduce the heat and simmer about 20 minutes or until the pasta is al dente. Stir in the cooked chicken and heat through.

  5. Transfer to a serving dish. Top with freshly grated Parmesan Reggiano, and tear some fresh basil leaves over top. Enjoy!
