Fish w/Cherry Tomatoes & Capers in Lemon White Wine Butter Sauce

Recipe Ingredients for Sauce - Fish w/Cherry Tomatoes & Capers in Lemon White Wine Butter Sauce

2 T pumpkin seeds
23 oz tilapia fillets
2 t kosher salt
1/2 t black pepper
1 1/2 T capers
1/2 cup cherry tomatoes
1/2 cup basil

Recipe Directions for Sauce - Fish w/Cherry Tomatoes & Capers in Lemon White Wine Butter Sauce

  1. Med-low heat, toss pumpkin seeds lightly. Don't let them brown, but as soon as you start to smell them remove from heat & set aside. Preheat oven to 400 F. Sprinkle fish w/1 t of s & p on both sides. Heat oil on med-high heat in lg oven-proof skillet. Heat oil til shimmers but not smoking. Place fillets skin side up in the hot oil and sear til fish begins to turn color - 2-3 minutes. Turn fillets and add lemon juice, wine, butter to the pan. As soon as butter melts & gets foamy, add capers, tomatoes & simmer til tomatoes release some juices (abt 1 minute). Place pan into oven til fish finishes cooking, about 7-10 min. Baste fish with some o' the juices and transfer to serving plate. Add basil, pumpkin seeds & the rest of the salt to the pan juices and stir til basil wilts. Spoon over the fish, garnish w/fresh basil, serve.
