Recipe Ingredients for Satisfying Vegetable Soup

4 cups Soup, Chicken Broth
4 cups Tomatoes, Red, Ripe
1 tbsp Basil, Fresh
1 tsp Oregano, Ground
2 Carrots
2 stalks Celery
1 Onions
3 Squash, Summer, Zucchini, Includes Skin
1 cup Beans, Snap, Green
3 cloves Garlic
1 Bay Leaf
1 Pepper, Black
4 cups Soup, Chicken Broth
4 cups Tomatoes, Red, Ripe
2 tbsp Olive Oil
1 tbsp Basil, Fresh
1 tsp Oregano, Ground
6 Carrots
1 cup Parsnips
1 Turnips
2 stalks Celery
1 Onions
3 Squash, Summer, Zucchini, Includes Skin
2 cups Spinach
2 cups Endive
6 cups Cabbage
8 oz Beans, Kidney, All Types, Mature Seeds
8 oz Beans, Kidney, Red, Mature Seeds
4 cloves Garlic
1 Pepper, Black

Recipe Directions for Satisfying Vegetable Soup

  1. Dice the escarole into bite size pieces and saute in 1 T olive oil. Set aside.

  2. 2.In the bottom of a large stock pot, saute onion, celery, garlic and carrots in 2 T olive oil until soft and slightly browned.

  3. 3.Cut the cabbage in half, then in half again. Slice diagonally. Cut parnip, zucchini, turnip into bite size pieces.

  4. 4.Drain the canellini beans and kidney beans well. Add to saute mixture stirring until all ingredients are thoroughly mixed. Add 4 cups low salt low fat chicken broth. Add 4 cups diced tomatoes and bay leaf, salt and pepper to taste. Bring to boil.

  5. 5.Add carrots, parsnip and turnip. Cook with lid on for 10 minutes.

  6. 6.Add cabbage, spinach, escarole. Cook for an additional 30 minutes.

  7. 7.You can remove 2 cups of soup and puree with an immersion blender, if you like a thicker soup. If not, garnish with a bam of parmigiano reggiano cheese (about 2 tbsp) and enjoy!
