A wonderful vegetable soup filled with protein and fiber, that is immensely satisfying

Recipe Ingredients for Satisfying Vegetable Soup

4 cups chicken broth
4 cups diced tomatoes
2 tbsp extra virgin olive oil
1 tbsp chopped fresh basil
1/2 tsp oregano
6 carrots, sliced
1 cup parsnip, diced
1 turnip, diced
2 stalks celery, chopped
1 onion, chopped
3 zucchini, chopped
2 cups spinach
2 cups escarole
6 cups cabbage
8 oz cannellini beans
8 oz kidney beans
4 cloves garlic, minced
1 salt and pepper to taste

Recipe Directions for Satisfying Vegetable Soup

  1. Dice the escarole into bite size pieces and saute in 1 T olive oil. Set aside.

  2. In the bottom of a large stock pot, saute onion, celery, garlic and carrots in 2 T olive oil until soft and slightly browned.

  3. Cut the cabbage in half, then in half again. Slice diagonally. Cut parnip, zucchini, turnip into bite size pieces.

  4. Drain the canellini beans and kidney beans well. Add to saute mixture stirring until all ingredients are thoroughly mixed. Add 4 cups low salt low fat chicken broth. Add 4 cups diced tomatoes and bay leaf, salt and pepper to taste. Bring to boil.

  5. Add carrots, parsnip and turnip. Cook with lid on for 10 minutes.

  6. Add cabbage, spinach, escarole. Cook for an additional 30 minutes.

  7. You can remove 2 cups of soup and puree with an immersion blender, if you like a thicker soup. If not, garnish with a bam of parmigiano reggiano cheese (about 2 tbsp) and enjoy!
