Recipe Ingredients for Sassy Sweet Potato & Quinoa Salad

1 sweet potato
1 cup water
1/2 cup Quinoa
3/4 tbsp olive oil
1/8 tsp cayenne pepper
1/8 tsp salt
1/2 red pepper, diced
2 tbsp lemon juice

Recipe Directions for Sassy Sweet Potato & Quinoa Salad

  1. bring water to boil

  2. simmer quinoa for 12-15 minutes until water is absorbed

  3. Boil or bake sweet potato until soft enough to fork

  4. place diced potato, diced pepper and quinoa in large bowl

  5. in small bowl wisk together oil, pepper, salt and lemon juice

  6. drizzle dressing over veggies and toss
