From Comany's Coming low fat cookbook. The book stated a completely different calorie count than this site. For 6 servings, 2lbs chicken, and 1.5 cups rice it stated it conained 311 cal, 21 g protein, 2.7 g fat (0.6 g saturated. 50 mg cholesterol). Don't have a clue why it is different (very different). Anyways, Using mexican style stewed tomatoes and jalapeno peppers gives this dish some extra zip.

Recipe Ingredients for Sassy Chicken Casserole

1 cup long grain white rice, uncooked
28 oz tomatoes, stewed
2 garlic cloves, crushed
1 medium onion, chopped
1 jalapeno pepper, finely diced (optional)
1 tsp chili powder
1 cup water
1 lbs chicken breast, skinless, boneless visible fat removed

Recipe Directions for Sassy Chicken Casserole

  1. Place rice in bottom of lightly greased 3 litre (3 quart) casserole dish.

  2. Combine tomatoes, garlic, onion, jalapeno pepper, chili powder, and water in a medium bowl.

  3. Pour 1/2 of mixture over rice in casserole dish.

  4. Slice chicken into thin strips.

  5. Arrange chicken in a layer over tomato mixture in the casserole dish.

  6. Top off with remaining tomato mixture.

  7. Do not stir.

  8. Bake, covered in 325 Degree F oven for 1 1/2 hours until chicken is cooked and all liqiud is absorbed.

  9. Garnish with cilantro or parsley if desired.
