Serve as a soup course. Ground chicken can substitute for the sardines. Try using curry powder or paprika as seasonings. If you like thicker soup, add corn starch at the end. This will also keep it hotter longer.

Recipe Ingredients for Sardine Dumpling Soup

8 sardines
1 t ginger juice (squeeze from grated ginger)
1/2 T miso
2 T rice wine
1 T all-purpose flour
3 c fish stock
1 t soy sauce
1/3 t salt
1 green onion or watercress, chopped for garnish

Recipe Directions for Sardine Dumpling Soup

  1. Have your fish monger gut and fillet the sardines. Place the fillets on a cutting board and dice into small pieces. Transfer to a mortar and pestle, or use a food processor to make a paste. Add the seasoned indregients and mix well. Shape the mixture into small dumplings.

  2. Heat the dashi broth or fish stock and add the dumplings. When the broth begins begins to boil, add the remaining soup ingredients and cook 3 to 4 minutes until the dumplings surface and change color. Skin the surface of any scum and garnish with a sprinkling of chopped green onion.
