1/2 cup arugula
1 ounce chedder cheese, diced
1/2 cup corn kernels
3 ounces sliced turkey breast
1/3 cup scallions, chopped

wash the leaves and spin dry. layer with the corn kernals, scallions and cheese and chopped roasted turkey breast from the deli. Suggest adding 1/3 cup cooked black beans and 3 tbs light blue cheese dressing
