Please note, almonds - ground refers to almond flour / almond meal. You need 1 cup of the ground product. These are pumpkin muffins, but the pumpkin could easily be substituted with whatever you want! This recipe does need about 3tbsp of sweetener, so just add whichever you want, but be aware that it will alter the carb count. I use Erythritol, which has almost zero carbs and calories. The pumpkin could be subsituted with low carb fillings such as blueberries, strawberries (ok, any berry, or a mix! yum!); omit the sweetener and add poppyseeds, herbs or small bits of bacon/ham/salami and cheese for a savoury muffin; get indulgent and add some cocoa powder (unsweetened) for a chocolate muffin; add some finely chopped almonds or walnuts for a bit of crunch! The possibilities are limited only by your imagination :) Just remember to keep it low carb!

Recipe Ingredients for Sarahs Low Carb Pumpkin Muffins

1 cup almonds - ground
1/2 tsp baking powder
1/8 tsp salt
1/4 cup butter, melted
2 eggs
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tbsp water
100 g pumpkin

Recipe Directions for Sarahs Low Carb Pumpkin Muffins

  1. Preheat your oven to 200C

  2. Combine all dry ingredients

  3. Combine all wet ingredients (including any "fillings" - in this recipe, pumpkin)

  4. Mix the wet in with the dry thoroughly

  5. Pour into greased muffin tins, and bake for 15-20 minutes or until done.

  6. Cool on a rack and eat!

  7. Tastes very good sliced in half and spread with cream cheese.
