Recipe Ingredients for Sarahs Low Carb Breakfast Frittata

1 Mushrooms, Portabella, chopped
1/2 red bell pepper, finely chopped
1/2 green bell pepper, finely chopped
3 Bacon - Streaky, sliced into small pieces
10 slices pepperoni, sliced into quarters
1 clove garlic, crushed
3/4 cup broccoli florets
6 eggs
6 tbsp Cream, Fluid
1 Salt to taste
1 Pepper to taste
1 Tabasco to taste
1/4 cup parmesan cheese

Recipe Directions for Sarahs Low Carb Breakfast Frittata

  1. )Preheat oven to 200 degrees celcius.

  2. Combine cream, eggs, parmesan, salt, pepper and tabasco in a bowl and whisk together. Save a little cheese to put on top if you'd like.

  3. In a large skillet, cook the bacon and pepperoni until crispy.

  4. Add all the vegetables and cook for about 5 minutes, or until vegetables look cooked enough!

  5. Add the whisked egg and cream mixture to the pan, and scramble the insides slightly, as it cooks. Bring the cooked stuff from the edges and move it into the centre of the pan.

  6. When the mixture is almost cooked but still wet, make sure veges are evenly distributed through the mixture, and take off the heat. Put into oven (make sure your pan is oven safe!) and grill until the mixture is firm in the middle.

  7. Take out of the oven and cool for 10 minutes before slicing and serving.

  8. Makes 6 serves. Can be frozen for a whole weeks worth of breakfast! Yum!
