A yummy red pepper & cherry tomato omelette - nothing special, just yum

Recipe Ingredients for Sarah's Cherry Tomato & Red Pepper Omelette

2 eggs
2 tbsp milk or water
1/2 red pepper
6 cherry tomatoes, chopped in 1/4's
1/4 cup grated cheese
1 dash salt
1 pepper to taste
1 tsp oil

Recipe Directions for Sarah's Cherry Tomato & Red Pepper Omelette

  1. Dice red pepper, chop tomatoes, and combine with 2 eggs in a bowl or jug.

  2. Whisk in half of the grated cheese, and add salt & pepper.

  3. Preheat the pan with a little oil and add the egg mixture.

  4. Cook until golden brown, adding the rest of the cheese half way throught.

  5. Serve and eat!
