I didn't do exact measurements on the vegetables. This is very close though. I made two seperate dishes and cut up to eat for breakfast through out the weeks.

Recipe Ingredients for Sarah's Breakfast

12 egg whites
4 eggs
1 1/2 green peppers, chopped
1 onions, chopped
10 ounces mushrooms, sliced
4 plum tomatoes, chopped
1/4 cup carrots, chopped
2 tablespoons garlic, minced
2 tablespoons basil
8 ounces feta cheese, low fat
3 tablespoons olive oil

Recipe Directions for Sarah's Breakfast

  1. Put 1 tablespoon olive oil in a skillet and cook green peppers, onions, and carrots until tender

  2. Move these vegetables into a bowl

  3. Put 1 tablespoon olive oil in the skillet and cook the mushrooms until tendar

  4. Move the mushrooms to the bowl

  5. Add the last tablespoon olive oil to the skillet and cook the tomatoes and garlic together until the juices are almost gone

  6. Add the tomatoes to the vegetable bowl

  7. Put egg whites and eggs into a bowl and whisk together.

  8. Add the feta chees and basil and whisk until well mixed.

  9. Take two 8x8 baking pans and spray down with cooking spray.

  10. Add a layer of vegetables to the bottom of each pan

  11. Pour half of the egg mixture of each of the vegetables

  12. Bake on 425 degress for 25 minutes or until the eggs are cooked.
