Recipe Ingredients for SAouth Indian Vegetable Curry

1 medium (2-1/2" dia) Onions
2 tsp Mustard Seed, Yellow
2 Teaspoon Chilli Powder
1 tsp Ginger, Ground
1 tbsp Curry Powder
1 tsp Turmeric, Ground
2 teaspoon Cumin, Ground
1 serving Black Peppercorn
3 small (5-1/2" long) Carrots
0.5 serving courgette raw
200 grams Frozen Green Beans
1 large (3" to 4-1/4" dia.) Potatoes, Boiled
1 cup Coconut Milk, Canned (Liquid Expressed From Grated Meat And Water)
1 Serving Stock Cubes
0.5 fruit (2-1/8" dia) Lemons
50 grams Rice, White, Long-grain, Regular, Cooked

Recipe Directions for SAouth Indian Vegetable Curry

  1. Chop the onion and the vegetables.

  2. Spray a large saucepan with frylight, and cook the onion over a medium heat for 4-5 minutes stirring regularly.

  3. Add the mustard seeds, curry leaves, chilli powder, ground ginger, curry powder, turmeric, ground cumin, and peppercorns. Stir fry for 30 seconds.

  4. Add the vegetables, coconut milk and vegetable stock. bring to the boil, then reduce the heat and cover, allowing it to simmer for 15-20 minutes (or until the vegetables are just tender.

  5. Start cooking the rice about 5 minutes after you?ve reduced the heat on the curry. This way both curry and rice should be ready at roughly the same time.

  6. When the curry is ready, take off the heat, remove the curry leaves, add salt and pepper to taste, and add the lemon juice. Stir in more chilli powder if you prefer it hotter. Serve and enjoy.
