This recipe was submitted by SparkPeople user and stated 273.6 calories per serving. CalorieCount says 533. Big difference. I will try to figure out which is correct by using information on each can. I am no longer using seasoning packets, but making my own to eliminate unnecessary sugars and preservatives.

Recipe Ingredients for SantaFe Stew

2 pounds lean ground beef
1 onion
30 ounces pinto beans, 2 cans
30 ounces red kidney beans, 2 cans
30 ounces sweet corn, 2 cans
10 ounces Rotel tomatoes
2 1/2 ounce taco seasoning mix (2 packets)
2 1/2 ounce Ranch Dressing Mix (2 packets)

Recipe Directions for SantaFe Stew

  1. Brown meat and onion.

  2. Add remaining ingredients and simmer for 30 minutes.

  3. Delicious served with or without rice.
