Based on Michelina's frozen meal; black and red chili beans with corn and rice with a sour cream roux sauce topping

Recipe Ingredients for Santa Fe style Rice and Beans, Homemade

15 oz can black beans
15 oz chili beans
10 oz can corn
2 cups dry rice
4 cups water
1/4 cup butter
1/4 cup flour
1/4 cup minced banana peppers
2 cup milk
1 cup sour cream

Recipe Directions for Santa Fe style Rice and Beans, Homemade

  1. Drain black beans. Combine black beans, red chili beans, Mexican style corn, dry rice, and water; bring to a boil and simmer until rice is cooked.

  2. Meanwhile, prepare a roux. Melt 1/4 cup butter over a double boiler. Stir in flour until most lumps are gone. Add milk and stir constantly until sauce begins to thicken. Add sour cream and stir constantly until melted into roux. Finally stir in banana peppers.

  3. Serve with roux sauce over rice and beans. Delicious!
