Spicy stuffed chicken breasts southwest style. Couples well with dirty rice or twice-baked potatoes.

Recipe Ingredients for Santa Fe Stuffed Chicken Breasts

1 1/2 lbs boneless skinless chicken breasts (3 pack)
3/4 cup chili peppers, finely chopped
1/2 cup jalapeno, finely chopped
3/4 cup red onion, finely chopped
3/4 cup mushrooms, finely chopped
3/4 cup shredded reduced fat mozzarella cheese
2 tbsp minced garlic
1/3 cup Parmesan & Romano grated cheese
15 oz fire roasted diced canned tomatoes
3 tbsp fresh cilantro, chopped
1 tsp dried basil
1/2 tsp black pepper
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
2 tbsp olive oil
2 tbsp lime juice
2 tbsp Worcestershire sauce
2 tbsp brown sugar
1/4 cup apple cider vinegar

Recipe Directions for Santa Fe Stuffed Chicken Breasts

  1. For the marinade:

  2. Combine 1/2 of all herbs and seasonings, 1/2 the garlic, 1/2 the olive oil, lime juice, Worcestershire sauce, brown sugar, and apple cider vinegar in a zippered food bag.

  3. Cut each chicken breast in half, then cut a hole lengthwise in the side of the breast, just deep and long enough to put some stuffing inside. Do not cut the chicken completely.

  4. Pierce the outer layer of the chicken breast with a fork to allow in more of the marinade.

  5. Place chicken breasts in marinade, toss in bag, and refrigerate for at least 2 hours.

  6. For the stuffing:

  7. Combine the vegetables (except the tomatoes), remaining seasonings, and oil in a large bowl. Divide in half.

  8. Combine one half with the tomatoes, and refrigerate.

  9. Combine the second half with the two cheeses.

  10. When the chicken breasts are ready:

  11. Preheat oven to 375 degrees F.

  12. Remove chicken breasts from marinade and lay out in a shallow baking dish.

  13. Stuff the chicken breasts with the cheese mixture.

  14. Pour 1/2 the remaining marinade into the tomato mixture. Stir, and refrigerate.

  15. Bake the chicken breasts for about 20 minutes, or until they start to brown.

  16. Remove from oven, top with tomato mixture, and return to oven. Bake for at least another 10 minutes.

  17. Remove from oven and allow to cool for 5 to 10 minutes before serving.
