Easy southwestern style soup. Can be made in Crock Pot.

Recipe Ingredients for Santa Fe Soup

2 lbs lean ground beef
1 large onion, chopped
2 ounce ranch dressing mix
2 ounce taco seasoning
11 ounce white shoepeg corn , (1 11oz can, drained)
3 c water
32 ounce black beans, (2 16oz cans, drained and rinsed)
32 ounce kidney beans , 2 16 oz cans, drained and rinsed)
15 ounce whole tomatoes , undrained
10 ounce ro-tel

Recipe Directions for Santa Fe Soup

  1. In dutch oven, cook ground beef and onion until meat is browned and onion is tender; drain.

  2. If desired, cool drained broth and skim off fat. Use broth instead of water in recipe.

  3. Add remaining ingredients to pot, blending well.

  4. Bring to a boil. Reduce heat, cover and simmer 2 hours.

  5. If desired, top individual servings with grated cheese, sour cream, and chopped green onions.

  6. Serve with Fritos or corn bread.

  7. Makes about 3 quarts.
