A favorite recipe of mine, but not so healthy. Ways to lighten it up... us 70/30 ground sirloin, half the corn, low-fat Velveeta cheese, and low-sodium tomatoes.

Recipe Ingredients for Santa Fe Soup

1 lb. ground beef
14 oz. whole kernel corn
14 oz. petite diced tomatoes
1 cup salsa
1 lb. Velveeta cheese
14 oz. kidney beans
2 tablespoons chili powder

Recipe Directions for Santa Fe Soup

  1. Brown ground beef and drain.

  2. Mix all canned contents with ground beef (not draining juices). Cube Velveeta and add to soup.

  3. Heat thoroughly until Velveeta is melted.

  4. Tips:

  5. You can use 1/2 the beans.

  6. I use homemade salsa (the best).
