Easy, low cal crock pot Santa Fe Chicken to serve over rice

Recipe Ingredients for Santa Fe Chicken

24 oz chicken breast
14 2/5 oz diced tomato
15 oz black beans
8 oz frozen corn
1/4 c chopped cilantro
14 2/5 oz fat free chicken broth
3 scallions
1 t garlic powder
1 t onion powder
1 t cumin
1 t cayenne pepper
1 salt to taste

Recipe Directions for Santa Fe Chicken

Combine all ingredients except chicken in crock pot. Season chicken breasts on top and season with salt. Cook on low for 10 hours or on high for 6 on low. Half an hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt & seasoning. Serve over rice with fresh cilantro and reduced fat sour cream
