Recipe Ingredients for Santa Fe Casserole

1/2 red onion
1 tablespoon garlic
1/2 tablespoon extra virgin olive oil
1/2 tablespoon chili powder
1/2 tablespoon pepper
2 cups red kidney beans
3/4 cup almond unsweetened milk
1 1/2 cup brown rice uncooked
2 eggs
6 ounces shredded light cheddar cheese
1 large red pepper
1/2 zucchini
2 cups broccoli

Recipe Directions for Santa Fe Casserole

  1. Sautee onion, garlic, and EVOO.

  2. Once tender, add chilli pepper and pinch of salt.

  3. Add other ingredients in mixing bowl, stir in onions.

  4. Bake in the oven for 25 minutes at 350 degrees.
