A fun take on a Spanish inspired salad. Low Fat, Low Cal.

Recipe Ingredients for Santa Fe Black Bean Salad

1 head Green Leaf Lettuce
1/2 large Purple Onion
3/4 cup Black Beans
3/4 cups Corn
1 1/2 cups Cucumber
1 Red Pepper
1 medium Tomatos

Recipe Directions for Santa Fe Black Bean Salad

  1. Chop and layer everything in order, into your favorite salad bowl. Serve.

  2. We add the following to make it even better: Grated Cheddar Cheese, and a handful of Quesadilla flavored Tostito Chips.

  3. For dressing, mix use Sour Cream, Salsa and Ranch Dressing mixed together.
