Easy vegetarian enchiladas - can be made ahead of time and thrown into the oven for a quick meal

Recipe Ingredients for Sanguni Black Bean and Spinach Enchiladas

2.5 cup Whole Peeled
0.06 cup Gold Medal All Purpose Flour
0.25 stick Margarine, Regular, Unspecified Oils
4 tbsp Chili Powder
15 tbsp chopped Chives
1 clove Garlic
1.5 cup Spinach
3.5 slice (1 oz) Colby Cheese
1.5 oz Fancy Shredded Italian Blend Cheese
10 tortillas 6" White Corn Tortillas 12ct
2 cup Beans, Black, Mature Seeds

Recipe Directions for Sanguni Black Bean and Spinach Enchiladas

  1. Cook beans with spinach until soft (couple of hours or in a crock pot). Pour off majority of water, mash if desired.

  2. In pan, cook tortillas (turn on both sides for 1-2 min each over med heat)

  3. Add butter, flour, stir, add tomatoes slowly stirring continuously to avoid lumps, once mixed add sugar/spices/garlic/chives or onion, and salt/pepper if desired, simmer 15-20 min with lid on stirring regularly.

  4. in baking dish, put solid layer of sauce on bottom, roll up enchilada with beans mixture and cheese and assemble in baking dish. add remainder of sauce over the top of the enchiladas, cover with foil, and bake at 375 for 45 minutes until bubbling on all sides. if desired, remove foil and add additional cheese and bake for 5-10 minutes until melted.
