light vegetarian chicken salad pita

Recipe Ingredients for Sandwich, Veggie Chicken salad pita

32 1/2 g veggie chicken
1/3 celery stalk
1/4 cucumber
1/6 c grapes, halved
1.33 tbsp mayo
1 dash of salt
1 dash pepper
1 loaf pita bread
6 oz spinach (3/4 cup)

Recipe Directions for Sandwich, Veggie Chicken salad pita

  1. cook the veggie pattie as directed

  2. remove and discard both ends of celery, cut in half lengthwise and cut into 1/4 inch thick pieces

  3. peel the cucumber, cut in quarters lengthwise and cut into 1/4 inch thick pieces

  4. cut the veggie chicken into bite-size pieces and place in a bowl along with the celery, cucumber and mayo

  5. stir until well combined and season with salt and pepper

  6. cut pita bread in half and fill each side with the chicken salad and some spinach
