this is a lower version of the classic zucchini bread. instead of adding 1 cup of oil, cut it in half and replace it with 1/2 cup of applesauce to keep it moist. This is excellent bread. If you are doing weight watchers, the points are 8 servings = 8 points each. 16 servings = 4 points each.

Recipe Ingredients for Sandi's Lower fat Zucchini Bread

3 eggs
1/2 cup oil
1 cups sugar
2 tsp vanilla
2 cups flour
1/4 tsp baking powder
2 tsp baking soda
3 tsp cinnamon
1 tsp salt
2 cups zucchini, grated
1/2 cup applesauce

Recipe Directions for Sandi's Lower fat Zucchini Bread

Blend eggs, oil, applesauce, vanilla. Add flour, baking powder, baking soda, cinnamon, salt, & zucchini. Grease 2 1 lb loaf pans or 4 small loaf pans. Bake 375 for 50-60 minutes.
