Perpetual Muffins in a Loaf...Batter will keep stored in refrigerator up to 6 weeks. Never makes it that long. I bake 5 loaves at one time and then freeze for later. I get 10 slices from each loaf for the calories listed.

Recipe Ingredients for Sandie's Bran Muffin Bread

2 cups Boiling Water
4 cups All-Bran Cereal
3 cups Fiber One Cereal
1 quart Low-fat Buttermilk
2 cups Sugar
4 Eggs, Beaten
1/2 cup Canola Oil
1/2 cup Applesauce
2 cups White Flour
3 cups Whole Wheat Flour
2 tablespoons Flax Seed
2 tablespoons Wheat Germ
5 teaspoons Baking Soda
1 teaspoon Salt

Recipe Directions for Sandie's Bran Muffin Bread

  1. Pour boiling water over cereals. Stir.

  2. Add buttermilk and sugar. Stir.

  3. Add beaten eggs. Stir.

  4. Add oil and applesauce. Stir.

  5. Mix all dry ingredients together. Add to wet mixture. Stir.

  6. Do NOT overmix. Will be lumpy.

  7. Spray 5 medium loaf pans with non-stick spray.

  8. Divide batter into the 5 pans evenly.

  9. Bake at 375* for 30-40 minutes. Test with toothpick. When touched should spring back up.
